Had a classic INSEAD throwback moment over lunch with a colleague today.

N: Oh, this soup is so good!

Me: Wow!  It looks good.  Is it a curry?

N: Yes, a curry…something.  Sigh.  Remember at Fonty the soups weren’t like this?  They were more creamy, and like …

N and Me together: velouté?!?!

Such an appreciation for the culture that would create a sauce and name it “velvety”.

Really, though, “velvety” does as little justice to velouté as “It is so good” does for “C’est si bon”!
